Greek Spiced Walnut Cake

Method

1. 1Preheat the oven to 175°C and grease a 20x20 cm baking pan. Finely grind or chop the walnuts.
2. 2In a bowl, beat eggs and 100 ml of the sugar with a hand mixer for 4 minutes until pale, thick, and foamy.
3. 3In a separate bowl, whisk together flour, baking powder, ground cinnamon, cloves, and chopped walnuts, then gently fold into the egg mixture until just combined.
4. 4Pour the batter into the greased pan and bake for 30 minutes until a wooden skewer inserted in the center comes out clean.
5. 5While the cake bakes, boil water, remaining 150 ml sugar, and 15 ml lemon juice in a small saucepan for 6 minutes into a syrup; pour the hot syrup slowly over the warm cake straight from the oven and let absorb completely.
