Swedish Aged Cheese Tart

Method

1. 1Preheat the oven to 200°C. Cut chilled butter into cubes and quickly pulse with flour and salt in a food processor or rub by hand until crumbly. Add cold water and gather into a dough ball.
2. 2Press the dough evenly into a 24 cm tart pan, covering the base and sides. Prick the bottom with a fork and chill in the refrigerator for 20 minutes.
3. 3Blind bake the crust for 10 minutes at 200°C until lightly set. Remove from the oven and let cool slightly.
4. 4Whisk together eggs, cream, milk, black pepper, and a pinch of salt in a bowl. Scatter the grated cheese across the pre-baked tart shell, then pour the egg custard evenly over the top.
5. 5Bake in the lower-middle part of the oven at 200°C for 30 to 35 minutes until the custard is set and the top has turned an even golden-brown. Let rest for at least 20 minutes before slicing lukewarm or cold.
