Traditional Swedish Easter Pasha

Method

1. 1Beat softened butter and sugar in a mixing bowl until light and fluffy.
2. 2Add the egg yolks one at a time while beating continuously, then stir in the quark and vanilla sugar.
3. 3In a dry skillet over medium heat, toast the chopped almonds for 3 minutes until fragrant, then fold them and the raisins into the quark mixture.
4. 4In a clean bowl, whip the heavy cream until soft peaks form, then gently fold into the quark batter.
5. 5Line a fine-mesh sieve or perforated mold with damp cheesecloth, spoon in the mixture, fold the cloth over, place a weight on top, and refrigerate overnight; unmold and decorate with fresh berries.
