American Fluffy Banana Pancakes

Method

1. 1Melt the butter in a pan and let cool slightly. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
2. 2In a separate bowl, mash the banana until smooth, then whisk in the milk, egg, and melted butter until well incorporated.
3. 3Pour the wet ingredients into the dry bowl and gently fold together until just combined; do not overmix, small lumps are fine. Fold in blueberries gently.
4. 4Heat a non-stick skillet over medium-low heat and grease lightly with a dab of butter. Pour 75 ml batter per pancake.
5. 5Cook for 2 to 3 minutes until bubbles appear on the surface and pop, then flip and cook the other side for 1 to 2 minutes until golden brown and cooked through. Serve warm.
